A Simple Egg Bake

Now that my refrigerator is being stocked with vegetables, eggs, cheese and milk, I've got ample time to use all of it before spoilage. One of my favorite, simple recipes is an egg bake with anything that I have to use.
The ingredients you'll need are:
5 to 6 eggs
1/4 cup milk (or anything you'd put in coffee such as Coffeemate, soy milk, etc.)
1/2 to 1 cup grated cheese (any kind)
Potatoes or bread (optional)
Vegetables (pretty much any kind)
Spices
Preheat over to 375 degrees.
Oil or spray a pie pan and decide what you want as a base. You can use potatoes (sliced thinly and pre-cooked in the microwave) or bread (torn into large pieces) or cheese. Press the base on the bottom of the pie pan.
Chop the vegetable(s) into bite-size pieces. I've used combinations of spinach, chard, asparagus, broccoli, mushrooms, zucchini, sun-dried tomatoes, bell peppers, green onions, chili peppers - anything I find that needs to be cooked soon. If you're using a vegetable like broccoli or onions, you may want to pre-cook it a little in the microwave oven. Arrange the chopped vegetables over the base.
Beat the eggs and milk with a fork or whisk - nothing fancy. Whisk in salt, pepper and spices that you have on hand. I've used dill, basil, thyme, red pepper flakes and Tabasco sauce. It's prettier if the spices are something you can sprinkle evenly. Pour the egg mixture over the vegetables.
Sprinkle the cheese over the top. Suggestion: A sprinkle of Parmesan cheese will ensure that the top is golden brown.
Bake for 20-25 minutes. It's done when the center is done. The time is dependent on the egg/vegetable ratio.
