Is There a Keto Chocolate Ice Cream?

Boy! The Keto diet is very limiting! Since my niece has been on this diet and I hear of foods like bread and ice cream that are taboo, it has now become my mission to figure out how to make foods that are Keto-compliant and delicious.


First experiment: Chocolate Ice Cream.

Results: Delicious (if you like the Truvia aftertaste)


Here's the recipe:


3/4 cup cocoa powder, sifted (I used Rodelle's Organic)

1/2 -3/4 cup Truvia

Pinch salt

1 cup soy milk

2 cups heavy cream

1 tablespoon pure vanilla extract


In a medium bowl, whisk together the cocoa, sugar and salt. Add the milk and, using a hand mixer on low speed or a whisk, beat to combine until the cocoa, sugars, and salt are dissolved. Stir in the heavy cream and vanilla.


Cover and refrigerate 1 to 2 hours, or overnight.


Using your ice cream maker, pour the mixture into the frozen freezer bowl and let it mix the solution until thickened, about 15 to 20 minutes. The ice cream will be soft and creamy. If a firmer consistency is desired, transfer the ice cream to an airtight container and place in the freezer for about 2 hours. Remove from freezer about 15 minutes before serving.
